SWEET POTATO PIE | |
2 med. sweet potatoes 1/2 c. (1 stick) butter 2 to 3 c. sugar 2 eggs 1 tsp. nutmeg 1/2 tsp. cinnamon 3/4 to 1 c. (13 oz.) evaporated milk 2 tsp. vanilla 1 (9 inch) pastry pie shell, unbaked Cook sweet potatoes in a little water in a tightly covered pan. Cool slightly, remove skins and mash well with butter so butter will melt. Mix sugar to taste, eggs, spices, vanilla and enough milk to make a smooth, creamy consistency. Pour into pie shell and bake in preheated 350 degree oven about 1 hour or until knife inserted in center comes out clean. |
