MY OWN SWEET POTATO PIE RECIPE | |
I like to can sweet potatoes when they are plentiful and in season. The canned potatoes are so easy to make into pies. 2 eggs 2 c. canned sweet potatoes 3/4 c. sugar 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. ground cloves 1/4 tsp. allspice 1 1/2 c. cream (or 12 oz. can evaporated milk) 1 (9-inch) deep dish pie crust, unbaked Preheat oven to 425°F. In blender, put first 9 ingredients. Put blender cap on and hold down. Blend until smooth. Pour into pie crust and bake for 15 minutes. Reduce heat to 350°F and bake for about 45 minutes longer (or until knife inserted near center comes out clean). |
