ANITA'S STUFFED CHICKEN
1. Slit the chicken breast down the middle without cutting all the way through. This is where the chicken will be stuffed. Also, make random small slits to allow the seasoning to seep in.

2. Season the chicken to taste with abodo and sofrito.

3. Take sirloin ground beef and cook at low flame until all grease is removed, drain. Keep chopping the meat with the spoon until it is very loose. It should not be in chunks.

4. Drain to remove all grease.

5. Season with adobo and sofrito to taste.

6. Add a little spaghetti sauce and cook again for about 10 minutes.

7. Remove meat from pan and mesh with bread crumbs until the entire meat is mixed with bread crumbs.

8. Stuff the center of the breast with chopped meat.

9. Wrap individual breasts with aluminum foil.

10. Put in the broiler at 450 degrees for about 30 minutes.

11. Open the aluminum foil and let sit in the broiler for about 5 to 10 minutes until the meat is a little brown.
