ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 2 c. peeled grated zucchini 3 tsp. vanilla 3 c. all purpose flour 1 tsp. salt 3/4 tsp. nutmeg 1/4 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1 c. nuts or raisins Mix first 5 ingredients in a large bowl with mixer. Sift together the dry ingredients and add to mixed. Beat well. Stir in nuts or raisins. Pour into greased and floured bread pans. Bake at 325 degrees for 1 hour and 10 minutes. Check after 1 hour. It will crack open at top. Makes 5 miniature loaves. |
