ZUCCHINI BREAD 
3 eggs
2 c. sugar
3 c. flour
1 tsp. baking soda
3 tsp. cinnamon
1/2 c. broken nuts
1 c. oil
2 c. zucchini, peeled and grated
1 tsp. salt
2 tsp. vanilla
1/4 tsp. baking powder

Mix first 4 ingredients, add dry ingredients and mix. Add nuts and vanilla. Bake in 2 average or 3 small greased and floured bread pans 50 minutes to 1 hour at 375 degrees. Freezes well.
