ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 3 c. flour 1 tsp. salt 2 tsp. cinnamon 2 tsp. baking soda 1/2 tsp. baking powder 2 c. grated zucchini 1 (8 oz.) can crushed pineapple, drained 1 c. chopped nuts 1 c. raisins (optional) Beat first 4 ingredients until thick and foamy. Sift together flour, salt, cinnamon, soda, and baking powder. Combine above with remainder of ingredients. Put in 2 greased and floured bread pans. Bake at 325 degrees for about 1 hour. |
