ROCKY MOUNTAIN APPLE BREAD 
4 lg. eggs
2 c. sugar
1/2 c. each buttermilk and mayonnaise
1 tsp. vanilla
3 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
2 med. tart green apples
1 c. raisins
1 c. walnuts

In a large bowl, beat eggs, sugar, buttermilk, mayonnaise, and vanilla until smooth. In another bowl, mix flour, salt, baking powder, soda, and cinnamon. Add egg mixture and stir until just combined. Core apples and chop. Add to batter with raisins and nuts and stir just to mix. Bake at 375 degrees about 1 hour and 10 minutes. Makes 2 loaves - 1 3/4 pounds each.
