CORN BREAD-SAUSAGE-APPLE PIE 
1 lb. bulk pork sausage
1 tbsp. vegetable oil
1 3/4 c. corn bread mix
1 egg, beaten
1 1/2 c. buttermilk
1 (21 oz.) can apple pie filling
1 tbsp. sugar
1/8 tsp. ground cinnamon

Cook sausage over medium heat until browned, stirring to crumble; drain well, and set aside.

Place oil in a 10-inch cast iron skillet; heat at 400 degrees for 5 minutes or until very hot.

Combine corn bread mix, egg, and buttermilk in a large bowl; stir until smooth. Stir in sausage. Pour into heated skillet; bake at 400 degrees for 25 to 30 minutes.

Place pie filling, sugar, and cinnamon in a small saucepan; cook over low heat, stirring constantly, until thoroughly heated. Spread over corn bread. Serve hot. Yield: 8 servings.

I have this exact recipe handwritten by my mom from 90's, right down the order of ingredients & the method of putting it together, I have never made this & my mom is no longer here for me to ask, so does anyone know if what they mean by 'corn bread mix' if this could be Jiffy

Yes - my mom has been making this every Christmas morning for many many years. She uses Jiffy (the entire box works). When I've made it, I have to cook it a few minutes longer so it is done in the middle. Doesn't matter if it sticks a bit in the pan because it will be covered with apples.
