CARROT CAKE 
1 1/2 c. oil
4 eggs

2 c. sugar
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
2 1/2 c. flour
3 c. ground or grated carrots, pressed down

Bake at 375 degrees for 45 to 50 minutes.

FROSTING:

1 sm. pkg. Philadelphia cream cheese
1 cube butter
Enough powdered sugar for spreading consistency

Flavor with fresh orange or lemon juice.
