CREAMED NEW RED POTATOES 
8 new red potatoes
1/2 c. diced onion
1 tbsp. dried parsley
1/2 tsp. celery salt
1/8 c. fresh parsley (opt.)
1 stick butter
1 c. sour cream
1/4 tsp. salt
1 tsp. pepper

Scrub potatoes and dice into cubes. Place in saucepan and cover with water. Cover pan and bring to boil. Reduce heat and cook until tender, approximately 10 minutes. Add diced onions when potatoes have boiled for 7 minutes. Do not overcook.

Drain potatoes and onions. While potatoes and onions are draining, melt butter (in the pan you cooked the potatoes). Stir in sour cream.

Return the potatoes and onions to the pan. Shake remaining seasonings over potatoes and toss until all ingredients are well mixed through potatoes. Garnish with fresh parsley (optional). Serve.
