HAWAIIAN CHICKEN 
1 chicken (I use pkg. of thighs, fresh or frozen)
1 c. pineapple
1/4 c. brown sugar
1/4 c. vinegar
3 tbsp. soy sauce
3 tbsp. cornstarch
1 sm. can pineapple chunks
1/2 c. green pepper
1 c. cashew nuts

Cook the chicken; bone it and cut it up. Heat the pineapple juice; add brown sugar, vinegar, soy sauce. Thicken it with moistened cornstarch. Add drained can of pineapple chunks and the sliced green pepper, also the pieces of chicken.

Arrange in baking dish and sprinkle nuts on top. Dab a bit of sauce on top of nuts. Bake at 350 degrees for 35-40 minutes.
