HARVARD EGGS | |
1 (8 oz.) pkg. boiled ham, chopped 6 hard boiled eggs, chopped 1 single pkg. Saltine crackers, crush 1/2 pkg. for top crust 1/2 lb. butter Salt and pepper to taste 1 sm. onion, chopped and sauteed Garlic salt or powder to taste 2 c. milk 2 tbsp. cornstarch Combine ham, eggs, 1/2 package of Saltine crackers broken up, salt, pepper, onion and garlic salt. Place in buttered casserole dish. In medium saucepan, pour milk, and 1/2 of the butter above, when nearing boiling, slowly pour in cornstarch that has been liquefied with a little water. Pour mixture over ham and eggs. Top with crushed crackers and dot with butter slices. Bake at 350 degrees for 30 minutes or until nice, hot and bubbly. Serve with fresh fruit, cottage cheese, sour cream, rolls, and peas. |
