FLUFFY EGGS WITH BROCCOLI 
1 (10 oz.) pkg. frozen, chopped broccoli
9 eggs
1/2 c. shredded Cheddar cheese
2 tbsp. instant minced onion
2 tbsp. milk
1 tsp. salt
1/2 tsp. dried basil
1/4 tsp. garlic powder
4 tomatoes, cut in halves

Place broccoli in baking dish, 10 x 6 x 1 1/2 inches. Cover tightly and microwave on high (100%) 4 minutes; break up and stir. Cover and microwave until crisp tender, 2 to 3 minutes longer; drain well.

Beat eggs; stir in cheese, onion, milk, salt, basil, and garlic powder. Pour over broccoli. Elevate baking dish on inverted dinner plate in microwave. Cover loosely and microwave on medium high (70%) 5 minutes; push cooked edges to center. Microwave until center is almost set, 4 to 6 minutes longer. Arrange tomatoes on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
