BROCCOLI EGG PUFF 
1 lb. broccoli
2 tbsp. flour
1/2 tsp. baking powder
5 beaten eggs
1 c. cream style cottage cheese
4 slices bacon, cooked, drained & crumbled
1/2 c. shredded Cheddar or Swiss cheese

Cut off broccoli buds; set aside. Chop remaining stalk; cook, covered in a small amount of boiling salted water for 5 minutes. Add reserved buds and cook another 5 minutes; drain and set aside.

In a small mixing bowl stir together flour and baking powder; set aside. In a medium mixing bowl beat eggs. With a wire whisk or rotary beater, beat in flour mixture. Stir in cottage cheese and bacon. Evenly spread broccoli in the bottom of a greased 10 x 6 x 2 inch baking dish. Pour egg mixture evenly over broccoli. Bake, uncovered, in a 350 degree oven for 20 minutes. Sprinkle with Cheddar or Swiss cheese. Bake 3 minutes or until center is almost set and cheese is melted. Let stand 5 minutes before serving. 6 servings.
