WASHINGTON PIE 
This dessert has three layers.

4 eggs, separated
1 c. all purpose flour
1 c. sugar
1 tsp. vanilla
Salt

Beat whites of eggs very stiff, and then beat in sugar. Beat yolks of eggs very thick, add flour, a little salt and vanilla. Fold two mixtures together and bake at 350°F in two Washington pie pans - 9 inch. Bake until set.

FILLING:

1 1/2 c. milk
1/3 c. sugar
1 egg
1 1/2 tbsp. cornstarch
Salt
1 tsp. vanilla
1/4 tsp. lemon extract

Scald milk in double boiler. Mix sugar, egg, cornstarch and a little salt. Add to scalded milk and stir until thick. Cool a few minutes longer. Cool and add vanilla and lemon extract.

FROSTING:

Melt 1 square of chocolate in double boiler. Add:

3 tbsp. milk
3 tbsp. butter

Stir together. Take from fire and add enough confectioners' sugar to spread well. Flavor with vanilla.
