CRUNCHY CHICKEN CASSEROLE 
4 to 6 chicken breasts
2 c. celery
1 can water chestnuts
1 can mushroom pieces
1 can cream of mushroom soup
2 c. real mayonnaise
1 stick butter
1 pkg. chicken-flavored Stove Top stuffing mix with herb packet
1/2 c. fresh onion

Boil chicken breasts until very well done, then debone and chop. Chop celery fine. Drain and slice water chestnuts. Do NOT drain mushrooms, use juice! Chop onion. Mix all above ingredients and put in 9 x 13 inch pan. Combine 1 package Stove Top stuffing mix with the herb packet and 1 stick melted butter. Fork out stuffing mix over casserole ingredients evenly. Bake at 350 degrees for 1 hour.
