CORN PUDDING 
1/4 c. butter
1/2 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. chopped pimento
2 eggs
1 can cream style corn
1/4 c. crushed soda crackers
1 tsp. salt
1/4 tsp. pepper

Melt butter in skillet. Add onions, pepper and pimento. Saute until tender. Beat eggs, add corn, crackers, salt and pepper and sauteed vegetables. Pour into 1-quart casserole. Bake in microwave for 15 to 20 minutes on high or put casserole dish in pan with water. Bake for 1 hour in oven at 350 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
