PUMPKIN ROLL | |
3 eggs 1 cup sugar 1 tsp lemon juice 2/3 cup all-purpose flour 1 tsp baking powder 2 tsp cinnamon 1 tsp ginger 1/2 tsp salt 2/3 cup pumpkin confectioners sugar 1 cup powdered sugar 8 oz cream cheese 4 tsp butter 1 tsp vanilla Unroll towel and spread icing over the whole roll. Save some icing for the sides. After icing is spread, roll cookie fairly tight. After cookie is rolled up, take the remaining icing and spread over both open ends. Sprinkle with confectioners sugar and wrap in waxed paper. Refrigerate. |
