CONFETTI HASH 
4 slices bacon, diced
3 c. cubed, cooked beef (from pot roast)
1 1/2 c. cubed, cooked potatoes (from pot roast)
1 c. gravy (from pot roast)
1 c. chopped onions
1/2 c. chopped celery
1 tbsp. Worcestershire sauce
1/2 tsp. freshly ground pepper
1 c. chopped mushrooms
1/2 c. diced red pepper
2 tbsp. chopped parsley
1/2 tsp. salt
6 eggs, fried or poached

In medium skillet, cook bacon until crisp. Remove and drain, reserving 1 tablespoon drippings. In large bowl, combine remaining ingredients, except eggs. Add bacon and mix well. Heat skillet with reserved drippings. Add hash and cook over medium heat until a crust forms on bottom. Turn and brown other side. Top each serving with an egg. Makes 6 servings, about 345 calories each with poached eggs, 380 with fried.
