ITALIAN CHEESE CAKE 
3 lbs. fresh ricotta cheese
12 eggs
1 tbsp. vanilla
1 1/2 c. sugar
Juice from 2 lemons
2 c. milk
2 tbsp. sambauca
Cinnamon

Preheat oven to 300 degrees. Mix everything together in large bowl with mixer until well blended. Batter will be slightly lumpy. Pour batter into a 15"x10"x2" pan that was lightly buttered and sprinkled with semolina. Sprinkle cinnamon over top of batter.

Place in 300 degree oven for 2 hours. DO NOT OPEN OVEN DOOR! After 2 hours insert toothpick in center of cake. If it is clean, remove cake from oven. IF not, cook 1/2 hour more and repeat process.
