JIFFY COCONUT PIE 
2 frozen pie crusts
2 c. sugar
4 eggs
3/4 stick butter
3/4 c. buttermilk
1 can coconut
1 tsp. vanilla
Dash salt

Have eggs and butter at room temperature. Beat eggs in bowl, add remaining ingredients and pour into the 2 pie crust. Bake at 350 degrees for 30 minutes, or until brown. Serve 1 pie and freeze 1 to serve later.
