JIFFY SPINACH PIE 
10 oz. pkg. frozen spinach, cooked and drained
1 c. sour cream
1 c. cottage cheese
1/2 c. Jiffy baking mix
1/4 c. melted butter
2 eggs
1 tiny can sliced stewed tomatoes, drained
1/4 c. Parmesan cheese

Heat oven to 350 degrees. Grease 9-inch pie plate. Spread spinach in plate. Beat sour cream, cottage cheese, eggs, baking mix, and butter until smooth. Pour over spinach. Top with tomatoes and sprinkle with Parmesan cheese. Bake for about 30 minutes or until knife in center comes out clean. Cool 5 minutes before cutting.
