PUMPKIN BARS | |
4 eggs 1 2/3 c. sugar 1 c. cooking oil 1 (16 oz.) can pumpkin 2 c. flour 2 tsp. baking powder 2 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. cloves 1 tsp. salt 1 tsp. baking soda In mixing bowl, beat eggs, sugar, oil and pumpkin until light and fluffy. In separate bowl, stir together flour, baking powder, spices, salt and soda. Add to pumpkin mixture and mix well. Spread batter in ungreased 15 x 10 x 1 inch sheet. Bake at 350 degrees for 25-30 minutes. Cool and frost. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese, room temperature 1/2 c. butter, room temperature 1 tsp. vanilla 2 c. powdered sugar, sifted Mix well. |
