DATE NUT BREAD 
1 c. dates (chopped)
1 1/2 c. boiling water
2 tsp. baking soda
1/4 c. shortening
1 1/2 c. granulated sugar
2 egg yokes (reserving whites)
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1 c. chopped nuts

Pour boiling water over dates and soda. Set aside to cool. Cream shortening sugar and egg yokes. Add flour, baking powder, salt and vanilla. Beat egg white until slightly stiff. Fold in the mixture. Add nuts. Bake for 1 hour in bread pan at 350 degrees. For Christmas, I bake in vegetable cans filled half full. These make nice gifts for people.
