PIZZA CRUST 
1 pkg. yeast
4 1/2 c. flour
1 tsp. salt
1 1/2 c. water
Salad oil

Substitute 2 cups whole wheat flour to make whole wheat crust.

Combine yeast, 2 cups flour and salt. Heat water to 125 degrees and add to flour mixture. Blend with mixer at low speed. Beat 2 minutes at medium speed. Beat in 1/2 cup flour and beat for 2 more minutes. Knead 8 minutes working in last 1 1/2 cups of flour.

Place in large greased bowl and cover with damp cloth. Let rise until double (3-4 hours). Punch down and cut in half (at this point one of the crusts may be frozen). Turn onto floured surface. Cover 15 minutes. Preheat oven to 450 degrees. Roll out with pin, place on sheet and brush with oil. Recipe can be doubled. Extra dough can be divided and frozen to use for a quick meal.
