POLENTA 
3 1/4 c. water
Dash of salt
1 c. polenta or corn meal
1/2 tbsp. butter
1/3 c. Parmesan cheese

Bring water to a boil, add salt and polenta and stir until it pulls away from side of pan and stiffens a bit; approximately 3 minutes. Add butter and cheese, stir to mix thoroughly. Pour into bowl to set. Remove from bowl, slice and warm on grill (if you are already BBQing). Serve as is or with pesto or tomato based pasta sauce spread thinly. Serves 4. Double recipe for additional servings.
