BARLEY-BROCCOLI SALAD | |
1 c. water with 1/8 tsp. salt 1 c. coarsely chopped broccoli 1 1/4 c. chopped tomato 2 tbsp. green pepper 2 c. shredded lettuce 1/2 c. barley 1/3 c. oil free Italian dressing 2 tbsp. onion 1 (2 oz.) jar diced pimiento Bring water and salt to boil; add barley. Cover and reduce heat; simmer 15 minutes, until water is absorbed and barley is tender. Combine broccoli and dressing; add remaining ingredients. Chill at least 30 minutes. Serve on shredded lettuce. 128 calories per 3/4 cup serving. |
