RICE PUDDING | |
1/2 c. rice 1 1/2 c. water 1 piece lemon rind 1 cinnamon stick 4 c. milk 1/2 c. sugar 1/4 tsp. salt 1 tsp. vanilla extract Ground cinnamon Cook rice in water with lemon rind and cinnamon stick until rice softens. Add the milk and sugar and salt. Cook over medium heat until it thickens, approximately 1 hour. Stir frequently so that it does not stick to bottom of pan. Pour into serving dish and sprinkle with cinnamon. Serve hot, warm or cold. Serves 8. |
