CHEDDAR, BACON POTATOES
(Microwave)
 
2 lg. baking potatoes
4 tbsp. butter
Salt
Freshly ground pepper
3 slices bacon, crisply cooked and crumbled
1 sm. tomato, seeded and diced
2 med. green onions, minced
2/3 c. sharp Cheddar cheese

Cook potatoes in microwave oven on high until tender, about 12 minutes. Make crisscross slices in top of each potato and push open. Add 2 tablespoons butter to each and mash well with a fork. Sprinkle with salt and pepper. Divide bacon, tomato and onions between potatoes. Top with cheese. Cook in microwave oven on high until cheese melts, about 1 1/2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
