AUSTRALIAN DESSERT PANCAKES 
2 c. milk
2 eggs
1/2 tsp. salt
1 1/2 c. all-purpose flour

Combine milk and eggs, gradually add flour and salt. Beat until smooth. Pour into pitcher or jug and let stand 1 hour. Heat some butter in a skillet. Pour in batter as though for an omelet. Cook over medium heat. Serve sprinkled with lemon juice and a little sugar or confectioners' sugar. Roll up and enjoy.
