RICE AND ARTICHOKE SALAD 
2 1/2 c. uncooked rice
5 c. water
4 pkg. MBT chicken broth
Chopped scallions
1/2 green pepper, chopped
Green olives, sliced
2 (6 oz.) jars marinated artichoke hearts
1 tsp. curry powder
2/3 c. mayonnaise

Cook rice in water with chicken broth and cool. Drain artichokes and save marinade (1/2 cut in). Add scallions, olives, pepper and artichokes to rice. Combine marinade with mayonnaise and curry. Toss rice mixture with dressing and chill.
