MANDARIN ALMOND SALAD 
1/4 c. sliced almonds
1 tbsp. plus 1 tsp. sugar
1/4 head lettuce (torn into bite size pieces)
1/4 bunch Romaine lettuce (torn)
2 med. stalks celery, chopped
1 (11 oz.) can mandarin oranges, drained

Dressing:

1/4 c. vegetable oil
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. parsley
Dash of pepper
Dash of red pepper sauce

Cook almonds and sugar over low heat. Stir constantly until sugar is melted and almonds are coated. Cool and bread apart. Store at room temperature.

Place all lettuce in plastic bag. Add celery and onions. Pour dressing into bag. Add oranges. Close bag tightly and shake until salad greens are well coated. Add almonds and shake.

When making the dressing, shake all ingredients in a tightly covered jar and refrigerate.
