ORANGE ALMOND SALAD 
10 c. mixed salad greens
1 (11 oz.) can mandarin oranges
1/3 c. toasted almonds

DRESSING:

3 tbsp. olive oil
1 tsp. lemon juice
2 tbsp. plus 1 tsp. red wine vinegar
1/2 tsp. fresh or 1/8 dried basil, tarragon, and oregano
1 tsp. Dijon mustard
1 clove garlic, minced

Mix greens and oranges; mix dressing and toss the greens. Sprinkle with almonds.
