ORANGE ALMOND SALAD 
1/2 head lettuce (you may add Romaine or spinach also)
1 c. chopped celery
2 green onions, chopped
1 c. drained mandarin oranges
1/4 c. candied slivered almonds

DRESSING:

2 tbsp. sugar
2 tbsp. red wine vinegar (do not substitute)
1/4 c. oil
1/2 tsp. salt & pepper
3-4 drops Tabasco sauce

To Candy Almonds: Mix 1/4 cup almonds (or more if you want to make extra, they keep well) and 2 tablespoons sugar in non-stick fry pan. Stir constantly over medium heat until sugar begins to "melt". Lower heat and stir until lightly browned. Cool and break apart.

Shake dressing before serving. Toss salad ingredients together. Add almonds. Pour dressing over just before serving.
