FRESH APPLE CAKE 
1 1/2 c. vegetable oil
1 1/2 c. sugar
1/2 c. brown sugar
3 eggs
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 c. finely chopped tart apple
1 c. chopped pecans

Beat oil and sugar together until well blended. Continue beating two minutes. Add eggs one at a time, beating well after each addition. Blend in vanilla. Sift together flour, salt and soda gradually; add to egg mixture, blending thoroughly. Stir in apple and pecans. Turn into greased and floured 10-inch tube pan. Bake in 350 degree oven 60-70 minutes.

FROSTING:

1/3 c. butter
1 c. brown sugar
1/4 c. milk
1 tsp. vanilla

Melt butter with brown sugar in saucepan over medium flame; add milk and bring to boil 2-3 minutes. Cool. Add vanilla. If frosting is not thick enough, beat a few strokes. Frost top and sides of cake.
