BEEF ENCHILADAS 
2 lbs. hamburger
1 lg. onion, chopped
1 1/2 tbsp. garlic powder
1 tsp. salt
Shortening
1/2 c. water
1 1/2 tbsp. chili powder
2 cans enchilada sauce
Cheese, grated
17 tortillas
Lard (optional)

Brown hamburger in 1/2 inch shortening. Add 1/2 onion, garlic powder, salt, chili powder, and water. Cover and simmer 1 hour. Warm enchilada sauce and about 1 inch of lard or shortening in 2 separate pans. Dip tortillas in oil and then sauce, making sure they are in oil for only a second. Place tortilla in plate. Put 2 tablespoons of meat mixture in center of tortillas. Fold tortilla over. Put 3 tortillas per plate. Garnish with onion and cheese. Place in hot oven until cheese melts. Serve hot. Place hot plate on paper plate.

If made ahead of time, refrigerate or freeze, without onion or cheese on top, by covering with foil. Defrost; garnish with onion and cheese. Replace foil. Put in hot oven (400 degrees) for 30 to 40 minutes.
