RED CABBAGE 
1 (3 lb.) red cabbage
1 green apple, peeled & chopped
1/4 c. brown sugar
1/4 c. malt vinegar
1/4 c. bacon fat
1 tsp. salt
Freshly ground black pepper
1 c. water

Shred cabbage. Put in saucepan with apples, sugar, vinegar, bacon fat, salt, pepper and 1 cup water. Bring to a boil, reduce heat, cover and simmer for 1 hour or until tender, stirring occasionally. Serves 6.
