ZUCCHINI BREAD | |
4 eggs 2 c. sugar 1 1/4 c. salad oil 1/4 c. water 3 c. flour (unsifted) 2 tsp. baking powder 1 1/2 tsp. baking soda 1/4 tsp. salt 2 tsp. cinnamon 1/2 tsp. allspice 2 c. shredded, raw, peeled zucchini Beat eggs. Add sugar, beating thick. Add oil gradually and continue beating until mixed. Add water, spices, soda, powder and salt. Stir in flour, then zucchini. Bake in 2 greased 9 x 5 x 3 inch loaf pans for 60-75 minutes. Makes 2 loaves. |
