MOM'S CHRISTMAS PEANUT BRITTLE | |
A Holiday Favorite! 2 cups sugar 1 cup light corn syrup (Karo) 1 cup water 2 cups peanuts 2 tbsp. butter 2 tsp. vanilla 2 tsp. baking soda Mix sugar, corn syrup and water in a heavy pan. Heat and stir until mixture boils. Cook rapidly to 236°F on a candy thermometer. Slowly stir in peanuts. Keep mixture bubbling. Cook to 280°F on thermometer, stir constantly. Stir in butter, cook to 300°F. Remove from heat. Stir in vanilla. Sprinkle baking soda over the top. Stir for 15 seconds until it is puffy. Pour into a buttered pan. Cool, break into pieces.
