SHEEPHERDER'S POTATOES 
4 lg. potatoes, cut in 1/4 inch slices
8 slices bacon, cut in sm. pieces
2 onions, chopped
Salt and pepper to taste

Cook bacon until almost crisp. Add onion; cook until tender. Drain; reserve 2 tablespoons drippings.

Layer potatoes in foil lined baking dish. Spread bacon, onion mixture over potatoes. Cover with foil. Bake in 350 degree oven for 1 1/4 ours.
