SUN - DRIED TOMATO FETTUCCINE 
1 c. dried tomatoes
1/2 c. olive oil
4 garlic cloves, minced
1/2 tsp. dried crushed red pepper
1 lb. spaghetti, freshly cooked
1 c. freshly grated Parmesan cheese
1/2 c. toasted pine nuts
Additional Parmesan cheese

Place tomatoes in small bowl. Add enough boiling water just to cover. Let stand until tomatoes are soft, about one minute. Drain and coarsely chop. Heat olive oil in heavy skillet. Add tomatoes, garlic and pepper. Saute until garlic is just golden, about 3 minutes. Transfer mixture to large bowl. Add spaghetti and one cup Parmesan. Toss well. Sprinkle with pine nuts. Serve, pass additional Parmesan. Serves 4.
