APPLE - SOUR CREAM COFFEE CAKE | |
1 c. butter 2 c. sugar 2 eggs 1 tsp. vanilla 1 c. sour cream (8 oz. carton) 2 c. plain flour 1/2 tsp. salt 1 tsp. baking powder 1 c. sliced cooking apples (1 lg. apple) TOPPING: 1 c. finely chopped nuts 5 tbsp. brown sugar 1 tsp. cinnamon Preheat oven to 325°F. It helps to have all ingredients at room temperature. On medium speed of electric mixer, cream butter and sugar until light and fluffy. Reduce to low speed and fold in eggs, vanilla and sour cream; mix well. Gently fold in apples. Spoon batter into a greased 9 x 13-inch glass baking dish. Combine topping ingredients and sprinkle over batter. Bake for 40-45 minutes or until center springs back when pressed lightly. Do not overbake. Serves 16-20. |
