APPLE SOUR CREAM COFFEE CAKE 
1 c. butter, softened
2 c. sugar
2 eggs
1 tsp. vanilla
1 c. sour cream
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 c. sliced cooking apples (1 lg. apple)

TOPPING:

1 c. finely chopped nuts
5 tbsp. brown sugar
1 tsp. cinnamon

Preheat oven to 325 degrees. Have all ingredients at room temperature. Use electric mixer on medium speed to cream butter and sugar until light and fluffy. Turn mixer down to low and fold in eggs, vanilla and sour cream; mix well. Add flour, salt and baking powder; mix well on low speed. By hand, fold in apples. Spoon batter into a greased 9 x 13 glass baking dish. Combine topping ingredients and sprinkle over batter. Bake 40 to 50 minutes or until center springs back when pressed lightly. Do not overbake. Serves 16 to 20. Wonderful!
