APPLE SOUR CREAM COFFEE CAKE 
1 c. butter, softened
2 c. sugar
2 eggs
1 tsp. vanilla
1 c. sour cream (8 oz.)
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 lg. cooking apple (quarter and slice)

TOPPING:

1 c. finely chopped nuts
5 tbsp. brown sugar
1 tsp. cinnamon

Preheat oven to 325 degrees. Have all ingredients room temperature. On medium speed of mixer cream butter and sugar until light and fluffy. Turn mixer to low. Fold in eggs, vanilla, and sour cream and mix well. Add flour, salt, and baking powder. Mix well on low speed. By hand, fold in apples.

Spoon batter into greased 9 x 13 inch baking dish. Combine topping ingredients and spread over batter. Bake 40 to 45 minutes or until center springs back when pressed lightly. DO NOT OVERBAKE. Serves 16 to 20.
