PEACHY COFFEE CAKE 
1 3/4 c. all purpose flour
1/2 c. oil
1/2 c. sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3/4 c. buttermilk
1 egg, beaten
2 tsp. baking powder
1 tsp. vanilla extract
3/4 tsp. baking soda
1/2 tsp. salt
1 c. peach pie filling

Heat oven to 350 degrees. In large bowl mix together flour, oil, sugar, cinnamon and nutmeg until crumbly. Remove 1/2 cup flour mixture; set aside. Add remaining ingredients except pie filling. Stir until just mixed. Pour batter into oiled and floured 8" baking pan. Spoon pie filling evenly over top of batter. Sprinkle reserved flour mixture over top of batter and filling. Bake 50 minutes or until cake tests done with wooden pick. Serve warm.
