RAISIN SPICE COFFEE CAKE | |
Grease 9 x 9 pan. Heat oven to 350 degrees. Beat all ingredients (except raisin and streusel) on low speed 30 seconds. Beat on medium speed 2 minutes. Spread half batter in pan, sprinkle half streusel and raisins, top with remaining batter. Bake 40 to 45 minutes until wood pick comes out clean. 2 c. all-purpose flour 1 c. sugar 1/3 c. butter, softened 1 c. milk 3 tsp. baking powder 1 tsp. salt 1/2 tsp. cinnamon 1/8 tsp. nutmeg 1/8 tsp. allspice 1 egg 1/3 c. raisins STREUSEL: 1/3 c. butter 1/2 c. flour 1/3 c. brown sugar, packed 1 1/2 tsp. cinnamon 1/8 tsp. allspice 1/8 tsp. nutmeg 1/2 c. nuts, chopped Cut butter into flour, brown sugar and spices until crumbly. Stir in nuts and top with remaining streusel and bake 40 to 45 minutes. |
