CHEESE STRATA 
8 slices bread
1/4 c. butter
2 1/2 c. diced American cheese
1/2 c. Ricotta cheese
4 eggs, slightly beaten
2 1/2 c. milk
1 tsp. salt
1/4 tsp. dry mustard

Butter bread; quarter each slice. Alternate layers of bread and cheese in 11 1/2 x 7 1/2 x 1 1/2 baking dish. End with cheese on top.

Mix remaining ingredients; pour over layers. Cover; chill (not necessary). Bake at 325 degrees for 45 minutes or until firm. Let stand for a few minutes; cut in squares. Serves 6.
