CORN KERNEL MUFFINS 
2 c. flour
2 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 egg, slightly beaten
7/8 c. milk
1/4 c. salad oil or melted shortening
3/4 c. whole kernel corn

Sift flour, sugar, baking powder and salt together into a bowl. Combine egg, milk, oil, and corn. Add to flour mixture and stir quickly until all flour is just dampened. Spoon into greased muffin tins. Bake in hot oven (425 degrees) 20 to 25 minutes.
