PIZZELLES 
4 c. flour
6 eggs, beaten
1 c. sugar
3/4 c. melted shortening (Crisco or butter)
1 tbsp. anise seeds
1 tbsp. anisette
1 tsp. anise extract
1 tbsp. vanilla

Borrow my pizzelle iron if you don't have one! On medium speed, beat eggs, gradually adding sugar, then shortening. Add remaining flavorings then add flour.

Drop by teaspoonful onto hot iron. Discard first cookie. Each remaining cookie should only cook about 20 seconds. Cook lighter or darker according to preference.

Makes about 60 cookies.
