PIZZELLES 
4 eggs
1/3 c. vegetable oil
2 c. minus 2 tbsp. flour
1/2 tsp. baking powder

FLAVOR VARIATIONS: ANISE:

1/2 c. sugar
2 tsp. vanilla extract
2 tsp. lemon extract
1 1/2 tsp. anise extract
1 tbsp. anise seed (optional)

ORANGE:

1/2 c. sugar
1/2 tbsp. almond extract
1/2 tbsp. orange extract
1/2 tbsp. orange peel (zest)
1/16 tsp. salt

CHOCOLATE:

1/4 c. plus 2 tbsp. sugar
Artificial sweetener equal to 6 tsp. sugar
1/3 c. unsweetened cocoa
2 tsp. vanilla extract

LEMON:

1/2 c. sugar
2 1/2 tbsp. lemon extract
Zest of 2 or 3 lemons

Combine all dry ingredients. Combine all liquid ingredients for the flavor of your choice. Mix well. Blend liquid ingredients into dry ingredients. Mix slowly. When batter is well blended, weigh out 1 1/2 ounces of batter and divide evenly into four portions. Bake in a pizzelle iron until nicely browned. Serving size: 4 Pizzelles. Makes 16 servings.
